A Quick History of Chocolate

Believe it or not, cacao is a fruit from brightly-colored cacao trees (Theobroma cacao) that originated in South America, where much of it still grows. Cacao fruit was eaten by Mesoamericans for centuries and consumed as fresh fruit straight from the tree – the white coating around the cacao beans has a mucilaginous effect on the body. Then, locals began to ferment the fruit to make alcoholic drinks and eventually began to use the alcoholic beverages to make vinegar. Later, fermenting, roasting, and grinding the cacao seeds became popular, which is how cacao is made today.
Cacao was traditionally used medicinally as a stimulant to treat fatigue and weight gain, an emollient to soothe damaged skin, and an antiseptic. While cacao doesn't have much use in modern medicine today, it has gained popularity for its antioxidant properties and emotional heart-opening effects, which have gathered people worldwide to truly understand its deeper meaning. Chocolate Truffle Recipe
This truffle recipe makes a pastille, a traditional way to mix herbs with a sweet medium (like honey) typically used to sweeten bitter or pungent herbs like Turmeric or Ginger. When you make this recipe, you'll also practice a time-tested, medicine-making technique.
Although 7 Mushroom Mocha™ doesn’t necessarily need a sweetener, mixing it with honey or maple syrup will give you a nice, sticky consistency to roll the truffles into bite-sized balls.
RECIPE:
Serving size: 18 truffles
1 cup 7 Mushroom Mocha™, plus more for dusting
¼ pure maple syrup or raw honey (alternatively, you could use Organic Rose Petal Syrup to make it extra special)
2 tablespoons powdered rose petals for dusting (optional)
TO MAKE:
• Add the 7 Mushroom Mocha™ to a small bowl. Make a well in the middle, then add in maple syrup or sweetener of choice.
• Stir with a fork until the powder is fully dissolved; this may take some effort and patience. It may look like you have too much powder, but keep mixing.
• Line an airtight container with wax or parchment paper.
• Roll the chilled mixture into approximately 18 small balls, rolling each in cacao or rose powder before placing it in the airtight container.
• Enjoy immediately, or refrigerate until ready to serve (flavor and consistency are best if refrigerated for at least 24 hours before serving).
